Evelyn is currently travelling Nohr looking for work. She would likely want to join up with a few others for safety, and better chances at better paying jobs. At this point her first concern is having money for food and better equipment, but she'd really like some company, too.
Friends
Evelyn wants friends so badly, but is hindered by her own shyness and lack of self confidence. Generally, if you're kind to her (and Mortimer, of course) and put up with her occasional awkwardness, she'll stick to you like glue, although she might need occasional reassurance that she's not a bother and the person really wants her around.
(Because of her desperation, it would be easy for someone to take advantage of her. That said, abusing her trust is a very quick way to be turned into wyvern chow, so proceed with caution.)
Relationships
If someone asked her out, she would think they were joking or playing a prank on her, full stop. If someone wanted to start a relationship with her, they would have to be very explicit about their intent, and very patient. She wants to be loved almost as much as she wants a friend, but given her youth and vulnerable emotional state, that might not be a good idea at this point.
From her end, she's demisexual/demiromantic, and thus would only develop feelings or attraction toward someone she was friends with first. But, even if she did, she likely wouldn't let the person know for fear of embarrassing herself.
Enemies
Evelyn doesn't like upsetting people, and thus avoids making enemies. However, in her current line of work, it's almost unavoidable that she's going to be hired to ruin the day of someone who's going to hold a grudge, or whose family is going to hold a grudge.
Similarly, her animosity is difficult to earn unless a person a) unapologetically hurts or insults Mortimer, or b) abuses her trust to the point she can no longer ignore it. She's more likely to react aggressively toward the former, and go out of her way to avoid the latter.
